Like a toque-wearing Moses, Andre Rochat parted the waves of Las Vegas price range buffets in 1980, bringing the cuisine of his native France to some culinary arts desert. Rochat has ever since included Andre's at the Monte Carlo and Alizé at the Palms. But his provincially decorated flagship in a 1930s-era downtown house-with four comfortable eating rooms, each representing a different French city and decorated by using plenty of wood, tapestries, and gentle lighting-is even now going strong, owing in part to a food list which includes both equally classic French dishes like coquilles Saint Jacques (scallops in a wine-enriched cream sauce) and a lot of with updated twists, like grilled quail with figs and prosciutto.
